- 6 bread slices (whole wheat or multigrain)
- ¼–⅓ cup hung curd or Greek yogurt
- ¼ cup grated carrots
- 2 tablespoons finely chopped onion
- ¼ cup finely chopped cabbage
- 2 tablespoons chopped bell peppers
- 2 tablespoons boiled sweet corn
- 1 tablespoon chopped coriander or parsley
- ¼ teaspoon black pepper
- ¼ teaspoon chili flakes (optional)
- Salt to taste
- Butter or olive oil for toasting
Instructions
- To prepare hung curd, strain yogurt in a muslin cloth for 4–6 hours or press for 30–40 minutes for quick use.
- In a bowl, combine hung curd with carrots, onion, cabbage, bell peppers, and corn.
- Add coriander, black pepper, chili flakes, and salt. Mix well to form a creamy spread.
- Toast bread slices lightly with butter or olive oil if desired.
- Spread the yogurt mixture evenly on one slice of bread.
- Cover with another slice, cut diagonally, and serve immediately.
Notes
Pat vegetables dry to prevent soggy sandwiches. Greek yogurt can be used directly as a hung curd substitute. The filling can be refrigerated for up to 24 hours.
