- 1 3/4 cups all-purpose flour
- 1/4 cup cornstarch
- 1/4 teaspoon salt

- 1 cup powdered sugar (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream butter, powdered sugar, and lemon zest until light and fluffy.
- In another bowl, whisk together flour, cornstarch, and salt.
- Gradually mix dry ingredients into the butter mixture until a soft dough forms.
- Roll dough into 1-inch balls and place on prepared baking sheet.
- Bake 8–10 minutes. Cookies should stay pale, not browned.
- Gently flatten cookies with the back of a spoon while warm. Cool completely.
- Whisk powdered sugar and lemon juice to form glaze. Spread over cookies and garnish with zest.
Notes
Use fresh lemon juice and zest for best flavor. Cookies can be frozen before glazing for up to 2 months. Store glazed cookies in an airtight container for up to 5 days.
