  • 1 large onion, quartered
  • 4 garlic cloves, peeled
  • 3 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 cup vegetable or chicken broth
  • 1 cup heavy cream
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Roast 30–35 minutes, until vegetables are caramelized and tender.
  4. Cool slightly, then transfer vegetables to a blender with the broth and blend until smooth.
  5. Pour blended mixture into a pot, stir in the heavy cream, and bring to a gentle simmer for 5 minutes.
  6. Taste and adjust seasoning. Garnish with fresh basil and serve hot.
