  • 1 to 2 bay leaves
  • 4 cups beef stock
  • ½ cup beer or dry white wine
  • 16 ounces potato gnocchi
  • 1½ cups shredded Gruyere cheese
  • ½ cup crushed Ritz crackers
  • ¼ cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat butter and olive oil in a large oven safe skillet over medium heat.
  2. Add sliced onions and cook 15 to 20 minutes until deeply caramelized, stirring occasionally.
  3. Stir in brown sugar, garlic, Worcestershire sauce, balsamic vinegar, thyme, salt, and pepper.
  4. Cook 1 to 2 minutes until fragrant.
  5. Deglaze the pan with beer or wine, scraping up browned bits.
  6. Add beef stock and bay leaves, then bring to a gentle simmer.
  7. Stir in gnocchi and cook according to package directions until tender.
  8. Remove bay leaves and adjust seasoning if needed.
  9. Sprinkle Gruyere evenly over the top.
  10. Mix crushed Ritz crackers with Parmesan and sprinkle over cheese.
  11. Transfer skillet to oven and bake at 375°F for 10 minutes.
  12. Broil 2 to 3 minutes until golden and bubbly.
  13. Let rest slightly before serving warm.

Notes
