- 4 large eggs
- ½ cup shredded Monterey Jack cheese
- ½ cup cottage cheese
- ½ roasted red pepper, finely chopped
- ¼ cup fresh spinach, chopped
- 1 green onion, finely chopped
- Salt and black pepper to taste
- 1 cup water (for Instant Pot)
Instructions
- Pour 1 cup of water into the Instant Pot and place the trivet inside.
- Add eggs, cottage cheese, and shredded Monterey Jack to a blender. Blend until completely smooth.
- Add spinach, roasted red pepper, green onion, salt, and pepper. Pulse briefly to combine.
- Lightly grease a silicone egg bite mold.
- Pour the egg mixture into each cavity, filling about three quarters full.
- Cover the mold tightly with foil or a silicone lid.
- Place the mold on the trivet inside the Instant Pot.
- Seal the lid and cook on High Pressure for 10 minutes.
- Allow natural pressure release for 10 minutes, then carefully release remaining pressure.
- Remove mold carefully, let cool slightly, then gently pop out egg bites and serve.
Notes
Cover the mold tightly to prevent condensation from making bites watery. For softer texture, do not quick release immediately. Store in refrigerator up to 5 days or freeze up to 2 months. Reheat 30 seconds if refrigerated or 1 to 2 minutes if frozen.
