Description
Mississippi Pot Roast is a rich, buttery slow cooker comfort food classic made with tender beef chuck roast, ranch seasoning, onion soup mix, and tangy peperoncini. The beef becomes melt-in-your-mouth tender and perfect for serving over mashed potatoes, rice, or in sandwiches.

- 3–4 lb beef chuck roast
- 1 packet ranch dressing mix
- 1 packet onion soup mix
- 1/2 cup unsalted butter (1 stick)
- 6–8 peperoncini peppers
- Salt and black pepper, to taste
- 1 tablespoon olive oil (optional, for searing)
Instructions
- Optional: Heat olive oil in a skillet over medium-high heat. Sear the chuck roast on all sides until browned for extra flavor.
- Season roast with salt and black pepper.
- Place roast in the slow cooker.
- Sprinkle ranch dressing mix and onion soup mix evenly over the top.
- Place butter on top of the roast.
- Add peperoncini peppers around and on top of the meat.
- Cover and cook on LOW for 8 hours, until the beef is fork-tender.
- Shred the beef with two forks and mix with the juices before serving.
Notes
No extra liquid is needed—the butter and peppers create enough moisture. Serve over mashed potatoes, rice, or on sandwich rolls. Leftovers store well and can be frozen up to 2 months.
