Description
Easy Jam Tarts are classic buttery treats with sweet jam or curd centers. Perfect for afternoon tea, lunchboxes, or festive gatherings, these timeless tarts are simple to make and endlessly customizable.

- 1½ cups all-purpose flour
- ½ cup unsalted butter, softened
- ⅓ cup granulated or caster sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½–¾ cup jam or fruit curd (strawberry, raspberry, blueberry, lemon curd, etc.)
Instructions
- Cream butter and sugar together until pale and creamy.
- Add egg and vanilla extract; mix until fully combined.
- Add flour in two parts and mix until soft clumps form.
- Roll dough to about 4mm thickness on a floured surface.
- Cut circles using a cookie cutter and place into patty pans or muffin tin.
- Gently press dough into the molds and chill for 30 minutes.
- Preheat oven to 350°F (175°C).
- Fill each shell with 2–3 teaspoons jam or curd.
- Bake for 10–12 minutes until edges are lightly golden.
- Cool in pan for 30 minutes, then transfer to a wire rack.
Notes
Fill tart shells generously, as jam settles slightly after baking. Use patty pans for rounded shells or muffin tins for deeper tarts. Best enjoyed fresh but stores well in an airtight container.
