- 2 tablespoons olive oil
- 1 large onion, diced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups vegetable broth
- 1 (14.5 oz) can diced tomatoes
- 2 medium potatoes, diced
- 1 cup green beans, chopped
- 1 cup corn kernels
- 1 cup peas
- 2 bay leaves
- 1 teaspoon dried thyme
- ½ teaspoon dried parsley
- Salt and black pepper to taste
- Optional: spinach, kale, beans, parmesan rind
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion, carrots, and celery until softened, about 5 minutes.
- Add garlic and cook until fragrant.
- Add broth, tomatoes, potatoes, bay leaves, thyme, parsley, salt, and pepper.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Add green beans, corn, and peas and simmer 5–10 minutes more.
- Remove bay leaves, adjust seasoning, and serve warm.
Notes
Vegetable soup is extremely flexible. Swap vegetables based on season, add beans for protein, or stir in leafy greens at the end for extra nutrition. This soup freezes well and tastes even better the next day.
