  • 4 large eggs
  • 3 tablespoons oil (peanut, vegetable, or olive)
  • 1 cup diced onion
  • 2 cups diced mixed vegetables (bell pepper, carrots, zucchini)
  • ½ cup sliced scallions (white and green parts)
  • Pinch of salt
  • 4 cups cooked jasmine rice (preferably day-old)
  • 2½ tablespoons soy sauce (tamari if gluten-free)
  • ½ teaspoon five-spice powder
  • Dash of ground white pepper (optional)
  • 12 teaspoons toasted sesame oil

Instructions

  1. Heat a wok or large skillet over medium heat and lightly oil the surface.
  2. Scramble the eggs until just set, then transfer to a plate and set aside.
  3. Add remaining oil to the pan and sauté onion, mixed vegetables, and scallion whites until fragrant.
  4. Add cooked rice and break up any clumps using a spatula.
  5. Season with soy sauce, five-spice powder, white pepper, and sesame oil.
  6. Stir in scrambled eggs and toss until evenly combined.

Notes
