- 4 large eggs
- 3 tablespoons oil (peanut, vegetable, or olive)
- 1 cup diced onion
- 1½–2 cups diced mixed vegetables (bell pepper, carrots, zucchini)
- ½ cup sliced scallions (white and green parts)
- Pinch of salt
- 4 cups cooked jasmine rice (preferably day-old)
- 2½ tablespoons soy sauce (tamari if gluten-free)
- ½ teaspoon five-spice powder
- Dash of ground white pepper (optional)
- 1–2 teaspoons toasted sesame oil
Instructions
- Heat a wok or large skillet over medium heat and lightly oil the surface.
- Scramble the eggs until just set, then transfer to a plate and set aside.
- Add remaining oil to the pan and sauté onion, mixed vegetables, and scallion whites until fragrant.
- Add cooked rice and break up any clumps using a spatula.
- Season with soy sauce, five-spice powder, white pepper, and sesame oil.
- Stir in scrambled eggs and toss until evenly combined.
- Garnish with scallion greens and serve hot.
Notes
Day-old rice produces the best texture. Avoid overcrowding the pan with vegetables to prevent soggy rice. Adjust soy sauce to taste.
