- 1½ lb boneless skinless chicken breasts
- 1 cup diced onion
- 1 cup sliced carrots
- 1 cup sliced celery
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried basil
- 1 teaspoon Italian seasoning
- ½ teaspoon poultry seasoning
- Salt and black pepper to taste
- 1 (12 oz) can evaporated milk
- 2 tablespoons cornstarch + 2 tablespoons water (slurry)
- 16 oz potato gnocchi
- 4 slices bacon, cooked and crumbled
- 2 cups fresh spinach
Instructions
- Add chicken, onion, carrots, celery, garlic, seasonings, and broth to crockpot.
- Cook on LOW for 6–8 hours or HIGH for 4–5 hours.
- Shred chicken directly in the crockpot.
- Stir in evaporated milk and cornstarch slurry.
- Add gnocchi and cook 45–60 minutes until tender.
- Stir in cooked bacon and spinach until wilted.
- Taste, adjust seasoning, and serve hot.
Notes
Soup thickens as it sits since gnocchi absorbs liquid. Add extra broth or milk when reheating. Freezing is not recommended due to dairy separation. For Instant Pot: pressure cook base 20 minutes, shred chicken, then add gnocchi and simmer using sauté mode.
