  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tablespoons flour (for coating the beef)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil (for browning)
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 4 large carrots, sliced into thick rounds
  • 4 medium potatoes, diced (Yukon Gold or red potatoes are great)
  • 2 celery stalks, chopped
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Optional: 1/2 cup red wine (for a little extra oomph)

Instructions

  1. Toss beef cubes with flour, salt, and pepper until lightly coated.
  2. Heat olive oil in a skillet and brown the beef in batches. Transfer to crock pot.
  3. Add chopped onion, carrots, potatoes, and celery to the crock pot.
  4. Add garlic, tomato paste, beef broth, Worcestershire sauce, thyme, rosemary, bay leaf, and optional red wine. Stir gently.
  5. Cover and cook on low for 8-10 hours or high for 4-6 hours.
  6. Taste and adjust salt and pepper before serving.
  7. Mash a few potato chunks against the side to thicken stew if desired.
  8. Remove bay leaf and serve hot.

Notes

This stew tastes even better the next day. Serve with crusty bread, buttered egg noodles, or a side salad. Store leftovers in the fridge up to 4 days or freeze for later.
