- 2 lbs beef chuck, cut into 1-inch cubes
- 3 tablespoons flour (for coating the beef)
- Salt and black pepper, to taste
- 2 tablespoons olive oil (for browning)
- 4 cups beef broth
- 1 tablespoon tomato paste
- 3 cloves garlic, minced
- 1 onion, chopped
- 4 large carrots, sliced into thick rounds
- 4 medium potatoes, diced (Yukon Gold or red potatoes are great)
- 2 celery stalks, chopped
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Optional: 1/2 cup red wine (for a little extra oomph)
Instructions
- Toss beef cubes with flour, salt, and pepper until lightly coated.
- Heat olive oil in a skillet and brown the beef in batches. Transfer to crock pot.
- Add chopped onion, carrots, potatoes, and celery to the crock pot.
- Add garlic, tomato paste, beef broth, Worcestershire sauce, thyme, rosemary, bay leaf, and optional red wine. Stir gently.
- Cover and cook on low for 8-10 hours or high for 4-6 hours.
- Taste and adjust salt and pepper before serving.
- Mash a few potato chunks against the side to thicken stew if desired.
- Remove bay leaf and serve hot.
Notes
This stew tastes even better the next day. Serve with crusty bread, buttered egg noodles, or a side salad. Store leftovers in the fridge up to 4 days or freeze for later.
