  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes or 2 cups fresh chopped tomatoes
  • 1 cup heavy cream (or Greek yogurt for lighter option)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning (optional)
  • ½ cup freshly grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until al dente.
  2. Reserve ½ cup pasta water, then drain and set aside.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add minced garlic and sauté for 1 to 2 minutes until fragrant.
  5. Add diced tomatoes, salt, pepper, and Italian seasoning. Simmer for 5 minutes.
  6. Reduce heat to low and stir in heavy cream until smooth and combined.
  7. Add cooked pasta to the skillet and toss to coat evenly.
  8. If needed, add reserved pasta water to loosen the sauce.
  9. Stir in Parmesan cheese until melted.
  10. Garnish with fresh basil and serve immediately.

Notes

For a lighter version, substitute heavy cream with Greek yogurt. For a vegan option, use coconut milk or cashew cream and dairy free Parmesan. Add spinach, mushrooms, chicken, or shrimp for extra protein and texture.
