Ingredients

Scale
  • 1 pound boneless skinless chicken breasts, cut into bite sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 16 ounces potato gnocchi (fresh or frozen)
  • 1 cup low sodium chicken broth
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1 cup fresh spinach

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with garlic powder, onion powder, salt, and pepper.
  3. Add chicken to skillet and cook 6 to 8 minutes until browned and cooked through.
  4. Reduce heat to medium low and add softened cream cheese.
  5. Slowly pour in chicken broth while stirring until smooth and creamy.
  6. Add potato gnocchi directly to the skillet and stir to coat in sauce.
  7. Cover and simmer 5 to 7 minutes until gnocchi is tender.
  8. Stir in fresh spinach and cook until wilted.
  9. Add shredded cheddar cheese and stir until melted.
  10. Fold in crispy bacon bits and serve warm.

Notes

Use room temperature cream cheese to prevent lumps. Avoid overcooking gnocchi to maintain texture. Add extra broth when reheating to restore creaminess. Rotisserie chicken can be used for a quicker version.
