- 3 tablespoons all-purpose flour
- ½ cup sour cream
- 1½ tablespoons strawberry extract
- 4 large eggs

- For the Ganache:
- 8 oz semi-sweet chocolate chips
- ½ cup heavy cream
- For the Whipped Cream:
- 1 cup cold heavy cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- Optional pink gel food coloring
- For Decoration:
- Chocolate covered strawberries
Instructions
- Preheat oven to 325°F (165°C). Line a 9-inch springform pan with parchment and grease the sides.
- Mix Oreo crumbs with melted butter, press into pan, and bake for 10 minutes.
- Blend strawberries until smooth, strain seeds, and simmer until reduced to ½ cup. Cool completely.
- Lower oven temperature to 300°F (150°C).
- Beat cream cheese, sugar, and flour on low speed until smooth.
- Add sour cream, strawberry puree, and extract. Mix gently.
- Add eggs one at a time, mixing just until combined. Add food coloring if desired.
- Pour filling over crust. Place pan in a water bath.
- Bake for 1 hour 10 minutes until edges are set and center jiggles slightly.
- Turn off oven, keep door closed for 30 minutes, then crack door open for another 30 minutes.
- Refrigerate for 5–6 hours or overnight.
- Heat heavy cream until boiling, pour over chocolate chips, and whisk into ganache.
- Spread ganache over chilled cheesecake.
- Whip heavy cream, powdered sugar, and vanilla to stiff peaks.
- Pipe whipped cream around edges and top with chocolate covered strawberries.
Notes
Use room-temperature ingredients for a smooth cheesecake. Avoid overmixing to prevent cracks. Cool gradually and use a water bath for best texture. Add chocolate covered strawberries just before serving.
