Description

This Cajun White Chicken Chili is creamy, spicy, and totally cozy. It’s loaded with tender chicken, white beans, smoky Cajun seasoning, and a velvety broth—all made in one pot for the ultimate weeknight comfort food.

  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 12 teaspoons Cajun seasoning (adjust to taste)
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • 3 cups cooked chicken, shredded (rotisserie works well)
  • 2 cans white beans, drained and rinsed
  • 1 can diced green chiles
  • 3 cups chicken broth
  • ½ cup heavy cream or half and half
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, green onions, chopped cilantro, tortilla strips, jalapeños

Instructions

  1. Heat olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Sauté diced onion for 3–5 minutes until soft.
  2. Add garlic, Cajun seasoning, cumin, and paprika. Stir for 30 seconds until fragrant.
  3. Stir in shredded chicken, white beans, diced green chiles, and chicken broth. Mix well.
  4. Bring to a simmer and cook uncovered for 20–25 minutes.
  5. Lower heat and stir in cream. Warm through without boiling. Adjust seasoning as needed.
  6. Serve hot, topped with your choice of garnishes like cheese, sour cream, green onions, or tortilla strips.

Notes

To make it in a slow cooker, add all ingredients except cream and cook on low for 4–6 hours. Stir in cream at the end. You can also use raw chicken—just simmer it in the broth, then shred. To make it dairy-free, use full-fat coconut milk or skip the cream. Add-ins like corn, mushrooms, or hot sauce work great. Freezes beautifully in portions for up to 3 months.
