- 1 tablespoon avocado oil or olive oil
- 6 Roma tomatoes, chopped and lightly salted
- 3 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 1 teaspoon dried oregano
- 2 tablespoons balsamic vinegar
- Sea salt and black pepper to taste
- Fresh basil leaves, chopped
- Cooking spray for baking dish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish.
- Heat oil in a skillet over medium heat.
- Add chicken, season with salt and pepper, and cook until lightly golden.
- Transfer chicken to the prepared baking dish.
- Top with tomatoes, garlic, oregano, and balsamic vinegar.
- Sprinkle mozzarella cheese evenly over the top.
- Bake uncovered for 18–20 minutes until cheese is melted and bubbly.
- Let rest 5 minutes, garnish with fresh basil, and serve.
Notes
