  • Diet: Vegetarian

Description

Banana blondies are the ultimate fusion of banana bread and classic blondies, offering a chewy, moist texture with rich caramel undertones. Ideal for family gatherings, potlucks, or cozy nights, these banana dessert bars are comforting yet indulgent.

Ingredients

Scale
  • For the Blondies:
  • 1/2 cup (1 stick) unsalted butter, browned
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg + 1 yolk
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup all-purpose flour
  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1/2 cup chopped pecans (optional)
  • Optional Buttermilk Fudge Frosting:
  • 1/4 cup browned butter
  • 1/4 cup brown sugar
  • 2 tablespoons buttermilk
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Bake blondies: Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. Brown the butter over medium heat until golden and aromatic.
  3. Mix browned butter with brown sugar, granulated sugar, salt, egg, yolk, and vanilla until smooth.
  4. Fold in flour gently, then mashed bananas and pecans (if using).
  5. Spread batter evenly into the pan and bake for 20–22 minutes, or until a toothpick comes out clean.
  6. Cool blondies for at least 1 hour before frosting.
  7. Optional frosting: Brown butter again, whisk with brown sugar and buttermilk, boil briefly, then add powdered sugar and vanilla. Spread over cooled blondies.

Notes

Use fully ripe bananas for maximum sweetness. Do not overmix after adding flour to maintain chewiness. Pecans are optional but add texture. Frosting sets quickly—apply to cooled blondies immediately.
