  • 1 bunch scallions (whites for cooking, greens for garnish)
  • 1 large carrot, cut into matchsticks
  • 67 cups water or chicken broth
  • Salt and pepper, to taste
  • 23 bundles dried ramen, egg noodles, or preferred noodles
  • 1 tablespoon soy sauce
  • 1 tablespoon black rice vinegar
  • 1 teaspoon sesame oil, plus more for drizzling
  • Crispy chili oil, to taste
  • Optional vegetables: bok choy, spinach, napa cabbage

Instructions

  1. Heat oil in a pot over medium heat. Sauté garlic, ginger, and scallion whites until fragrant.
  2. Add chicken thighs, salt, pepper, and water/broth. Simmer until chicken is cooked through.
  3. Remove chicken, shred it, and return it to the pot.
  4. Add carrots and noodles. Cook until the noodles are tender.
  5. In a small bowl, mix soy sauce, black rice vinegar, sesame oil, and chili oil.
  6. Drizzle the sauce over the soup before serving.
  7. Garnish with scallion greens and an extra splash of sesame oil.

Notes
