- 1 lb chicken thighs (or breasts with caution to avoid dryness)
- 3–4 garlic cloves, minced
- 2 tablespoons fresh ginger, minced
- 1 bunch scallions (whites for cooking, greens for garnish)
- 1 large carrot, cut into matchsticks
- 6–7 cups water or chicken broth
- Salt and pepper, to taste
- 2–3 bundles dried ramen, egg noodles, or preferred noodles
- 1 tablespoon soy sauce
- 1 tablespoon black rice vinegar
- 1 teaspoon sesame oil, plus more for drizzling
- Crispy chili oil, to taste
- Optional vegetables: bok choy, spinach, napa cabbage
Instructions
- Heat oil in a pot over medium heat. Sauté garlic, ginger, and scallion whites until fragrant.
- Add chicken thighs, salt, pepper, and water/broth. Simmer until chicken is cooked through.
- Remove chicken, shred it, and return it to the pot.
- Add carrots and noodles. Cook until the noodles are tender.
- In a small bowl, mix soy sauce, black rice vinegar, sesame oil, and chili oil.
- Drizzle the sauce over the soup before serving.
- Garnish with scallion greens and an extra splash of sesame oil.
Notes
Store broth and chicken separately from the noodles to prevent sogginess. Broth keeps 4 days in the fridge or 3 months frozen. Add noodles fresh when reheating. Customize with tofu, mushrooms, greens, or different noodle types.
