Ingredients

Scale
  • Fritter Bites:
  • 2 medium apples, peeled and diced
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • Pinch of salt
  • 1 egg
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter or oil
  • For Frying:
  • Neutral oil (vegetable or canola)
  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Apples: Peel and dice apples into small chunks about the size of blueberries for even cooking.
  2. Make the Batter: In a bowl, combine flour, sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, whisk egg, milk, vanilla, and melted butter. Combine wet and dry ingredients, then fold in diced apples. Rest batter 5–10 minutes.
  3. Heat the Oil: Warm oil to 350°F (175°C) in a deep pan.
  4. Fry the Fritters: Drop spoonfuls of batter into hot oil and fry 2–3 minutes per side until golden brown. Don’t overcrowd.
  5. Drain and Cool: Transfer to a paper towel-lined plate or wire rack.
  6. Make the Glaze: Whisk powdered sugar, milk, and vanilla until smooth and pourable.
  7. Glaze and Serve: Dip fritters or drizzle glaze on top. Let set briefly or enjoy warm.
