- 1/2 cup (1 stick) unsalted butter, softened

- 1 teaspoon ground cinnamon
- For the Apple Mixture:
- 1/2 cup chopped Granny Smith apples
- 1/2 cup chopped Honeycrisp apples
- 1/3 cup toasted pecans (optional)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Toast pecans in a skillet until fragrant, then chop and set aside.
- In a medium bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla.
- Whisk together flour, baking powder, salt, and cinnamon. Gradually fold into butter mixture until just combined.
- Fold in chopped apples and toasted pecans gently.
- Spread batter evenly into the prepared pan and bake for 30–40 minutes or until golden brown and set.
- Allow to cool 15–30 minutes before slicing into bars.
Notes
Serve as-is or with caramel sauce and vanilla ice cream. Store in an airtight container at room temperature for up to 3 days. Can be frozen for up to 3 months.
